Biography
Dr. Kristina Mastanjevic graduated in 2008 in Food toxicology. This determined the future course of her scientific activity as she continued to research mycotoxins in malt and beer. After graduation in 2008, she started to volunteer at Faculty of food technology on a project “Improvement of food safety in production and processing of cereals”. In February 2009, she got a job on the same project and started to work as a teaching assistant for prof. Krstanovic. She got her PhD titled “The impact of molds from genus Fusarium on mycotoxicological quality of wheat, wheat malt and beer” in January 2015. In March 2017, she got a position as an assistant professor at the University of Osijek, Faculty of Food Technology.Mr. Nigel Atkinson is a Senior Lecture in Food Chemistry, at Teesside University in the UK. He is course leader of BSc Food and Nutrition, and teaches in specialised subject areas including food science, nutrition, food chemistry, biochemistry and metabolism, public health, mapping and data visualisation, learning skills and employability. He is a member of the Scientific Advisory panels for educational conferences including the International Conference of Education, Research and Innovation (ICERI).Dr. Abrehet was born in the rural area of Tigray, Ethiopia. Abrehet grow up, attend her primary and secondary school in the place where she was born. She awarded a Bachelor of Science degree in Food Science and Post-harvest Technology from Hawassa University in 2007, Masters of Science in Food Technology from Gent University in collaboration of Catholic University of Leuven in 2011. Abrehet was working as a researcher and Lecturer from 2011/2012-2016 at Hawassa University and promoted to Assistant professor. She has the experience to work in team, reviewed manuscripts and contribution of published data to the scientific community on behalf of her and with her colleagues in the area of Life Science. Currently she is a PhD fellow at Egerton University, Kenya supported by NICHE, the Netherlands. Dr. Michael J. Gonzalez is Professor at the Nutrition Program, School of Public Health in the Medical Sciences Campus, University of Puerto Rico and Adjunct faculty at the University of Western States. Dr. Gonzalez is a Fellow of the American College of Nutrition, and has authored over 200 scientific publications. He has serve as a member on several scientific Editorial Boards. He has served as consultant for several companies where he has been responsible for designing formulations of nutritional supplements and pharmaceutical products. He has also been a consultant for The Center for the Improvement of Human Functioning (now Riordan Clinic), in Wichita, Kansas. He has obtained several research awards for his work on Nutrition and Cancer. He is currently Director of RECNAC II project, and Research Director of the InBioMed Project Initiative. Dr. Gonzalez also serves as a nutrition consultant to the Puerto Rican Basketball National Team and is part of the Medical Commission of the Puerto Rican Basketball Federation. He was part of the Medical Staff of the Vaqueros de Bayamon professional basketball team. He is in a part time clinical practice with Dr. Miguel J Berdiel in Ponce, PR. In December 2013,Dr. Gonzalez was exalted as Distinguished Ponceño in Medicine. In 2015 he was selected as member to the prestigious Puerto Rican Academy of Arts and Sciences and to the Iberoamerican Academy of Culture and Sciences. Dr. Gonzalez was inducted to the International Hall of fame of Orthomolecular Medicine April, 2016. He is one of the first latino and Puerto Rican to be inducted to the International Hall of fame of Orthomolecular Medicine.Dr. Uloma Onyeka is a professor of Food Chemistry and Nutrition. She enjoys working with rural women especially in the area of transfer of simple food processing skill to both farmers and food processors. She is a good in statistical analysis of food research data.
Presently she is a lecturer at the department Food science and Technology, Federal University of technology Owerri, Nigeria. She has been in the teaching and research business for two decades precisely since 1998. As a lecturer she has supervised over 60 research (undergraduate and postgraduate) thesis and has taught various courses in Food science and Technology. She served as a member of the University accreditation committee for the Nigerian government
she served as a consultant to some Industrial establishments. In the time past (1997-1998) she worked as a consultant (postharvest Unit) for the International Institute of Tropical Agriculture Ibadan, Nigeria. She is an active member of Nigerian Institute of Food Science and Technology (NIFST), Nutritional Society of Nigeria (NSN), Organisation of Women in Science for the Developing World (OWSD).Dr. Nahla Al-Bayyari is an assistant professor in human nutrition and dietetics at Al-Balqa Applied University, faculty of Al-Huson University college, department of Nutrition and Food Technology. Graduated from the University of Jordan with a Ph.D in human nutrition and dietetics and a Master in Public Health (Maternal and Child Health Care) and Bachelor degree in Public Health Nutrition from Jordan University of Science and Technology (JUST). After graduation from JUST she worked as a research assistant at JUST and lecturer in higher education associations. Currently she is an assistant professor and a researcher in public health, human nutrition, dietetics, infertility and maternal and child health. She is the author of Public Health and Safety book and several original research articles. These days working on three public health nutrition research projects deals with homocysteine, statins and trace elements topics.Dr. Francisco Javier Carballo is Full Professor of Food Technology at the Faculty of Sciences of the University of Vigo, Spain, since 11 july 2000. He received his B.S. (1984) and he obtained his Ph.D. (1989) in Veterinary Medicine from the University of León (Spain), both with Special End of Degree Awards. His doctoral thesis dealt with the purification and characterization of diacetyl reducing enzymes in order to search the way of inhibiting them and preserve the aroma of butter and fermented milks. Later he completed a research stage at the Station de Recherches Laitières, Jouy-en-Josas, France, working in the selection of lactic acid bacteria strains.
In the last 25 years, he has developed his research activity in the study and improvement of traditional foods. In this scientific field, he published more than 170 research articles in the most reputed international journals, and wrote more than 25 book chapters. Former President (from 2008 to 2016) of the Food Microbiology Section at the Spanish Society of Microbiology, he joined the Scientific Committee of many national and international congresses, and he is part of the Editorial Board of several reputed international journals (Food Microbiology, Frontiers in Microbiology, etc.) in the Food Science and Technology field. He has also acted assiduously as a translator to Spanish of scientific books in the field of Food Science and Technology.
He collaborates assiduously as an evaluator for the ANEP (National Agency for Evaluation and Prospective, Spain), for the Agencies of Evaluation of various Spanish Autonomous Communities (Andalusia, Castilla y León, Castilla-La Mancha, and Madrid) and for the National Research and Innovation Agencies of some Latin American countries (Chile, Peru and Uruguay). During the last 5 years he assiduously collaborates as a Technical Expert with the ACIE (Spanish Agency for Certification in Innovation) issuing reports on the certification of projects on development of some of the most important novel food products put on the market by Spanish companies operating in the field of foods. He has collaborated as an expert in the IMAN program (Strategic Intelligence Capturing Unit) of the Xunta de Galicia (The regional government of the NW Spain). He is currently part of the Advisory Committee of the Galician (NW Spain) Health System (SERGAS).
As a University Professor, he has developed his full-time activity successively as Assistant Professor, Associate Professor, and Full Professor, in an uninterrupted manner from November 15, 1989 to the present.Dr. Ângelo Luís is currently a Post-Doc Researcher in Food Chemistry/Mathematical Modelling at Health Sciences Research Centre, University of Beira Interior (Portugal). He received his PhD in Biochemistry in University of Beira Interior in 2014, as recipient of a research fellow from Portuguese Foundation for Science and Technology. He is author of several international publications and of a national patent.Professor Tomislav Mašek received doctoral training in animal physiology at University of Zagreb and he is currently associate professor in animal nutrition and dietetics at Faculty of Veterinary Medicine. In addition to research, professor Mašek teaches animal nutrition and comparative nutrition to graduate students and laboratory animal science to postgraduate students. His current research explores lipid metabolism including fatty acid transport through bio membranes in physiological conditions as well as in metabolic disorders such as diabetes and metabolic syndrome. His additional research interest is comparative lipid metabolism in different animal species. He is a recipient of funding from Croatian Science Foundation.Dr. Gina Lladó Jordan obtained her PhD in Biomedicine and Health Sciences at Universidad Europea de Madrid, Spain. Her thesis dissertation was focused on the biological biomarkers of Eating Disorders (ED). She has completed 5 masters related to various aspects of health sciences.
During her thesis period, she also did a stay in the Hospital Infantil Universitario Niño Jesús in Madrid, in the unit of Eating Disorders (ED), in order to analyze the relationship between blood alterations, ED and its subtype.
She was an Expert Consultant for the drafting of the new Dietary Guidelines of the Spanish Society of Community Nutrition, guides that were recognized with the Best Ideas Award 2017 in Health Promotion and Solidarity.
In 2013, cooperating in the Food Security Project for the maternal and child population of the Basse Region, Republic of The Gambia, with the NGO Nutrition Without Borders.
Currently she works as an investigator and teacher in Universidad Isabel I, Burgos, Spain, in the University Degree in Human Nutrition and Dietetics. She is also a professor in the Master's Degree in Nutrition and Health at Universitat Oberta de Catalunya (UOC). She has directed 20 Final Degree Projects and participated in national and international conferences and in publications. She has also participated in multiple studies and research groups.

She has Doctorate degree in in Agricultural, Environmental, Food Science and Technology by Università di Bologna (2017), where her PhD thesis was entitled “Proposal for A New Model For Evaluation of Wine Oxidation”. Dr. Palma recent work focuses on antioxidant properties of wine and related topics.Dr. Wei Xu graduated in 2015 in major of Agricultural products processing and storage engineering. During doctoral study, he was also cultured in Taiwan National Chung-hsing University for Half a year. After graduation, he started to work as a lecture in Xinyang normal university. In the same year, he was financially supported by the National Natural Science Foundation of China and Natural Science Foundation of Henan province in the field of functional food ingredients. Dr. A S Sarpal, 41 year diverse experience in the molecular level characterization, product development, new method development, Additive-Additive interaction, Structure-Property Correlation and Molecular Dynamics studies of petroleum, lubricants, petrochemicals & related products, Bio-fuels (Algae, yeast, vegetable oils) bitumen, polymers and catalyst by the applications of sophisticated analytical techniques such as FT NMR, FTIR, Gas & Liquid chromatography, X-Ray Techniques (XRD & XRF) Electron Spectroscopy (TEM, SEM, ESCA) Metal analyses (ICAP, ICP-MS, AAS) CHNS.Dr. Semiu Olalekan OGUNWOLU was born on 08 November 1964 at Abeokuta. He obtained OND (Food Science and Technology) at Ogun State Polytechnic, Abeokuta (1984), HND (Food Technology) at Federal Polytechnic, Ado Ekiti (1990), BSc (Food Technology) at University of Ibadan (1999), MSc (Food Technology) at University of Ibadan (2000), PhD (Food Processing and Storage Technology) at University of Agriculture, Abeokuta (2009). He joined Cocoa Research Institute of Nigeria, Ibadan in 1992 as Laboratory Technologist 11 and got converted to Research Officer 1 (Crop Processing and Utilization) in 2000. He has 19 Journal publications and 20 others in proceedings and Books.Dr. Raphael Nnajiofor Okigbo was born on 17th December, 1963 at Ojoto in Idemili South LGA, Nigeria. He attended St Odilia’s Primary School, Ojoto from where he preceded to the famous Christ the King College (CKC) Onitsha (1973-1978). He has B. Sc. Botany (1984), M. Sc. Botany (1988), M. Sc. Microbiology (1992) and Ph. D. Microbiology (1995) all from the University of Benin, Edo State, Nigeria and a Post Graduate Diploma in Education from Usmanu Danfodiyo University, Sokoto (2010).
Raphael Nnajiofor Okigbo became a Professor of Botany of Nnamdi Azikiwe University, Awka, Nigeria in 2008. He has served as a key note speaker in many International and Local Conferences. Dr. Ahmed Mamun has worked in the career of pharmaceutical industry for 11 years, in the field of Analytical Chemistry, Methodology and Validation. Since 5 years he is a Quality control supervisor in orchidia pharmaceuticals for ophthalmic. He has been a researcher in analytical chemistry of faculty of pharmacy in Cairo university since 2012. He received a B.Sc degree in Biochemistry and Food Technology, an MSc and Ph.D in Biochemistry/Nutrition and Food Security at the University of Dschang, Cameroon. He is actually a Faculty and Dean of the School of Agriculture and Natural Resources, Catholic University Institute of Buea, Cameroon. He is an active young researcher, with over 20 publications in the area of food stability, food chemistry, food preservation and functional foods. He is a member of the Cameroon Forum of Biological Sciences (CAFOBIOS). He was awarded two research fellowships in 2013 and 2014 respectively, the CV Raman International Fellowship for African Researchers in India, and the CSIR-TWAS Fellowship for Post-graduate Research, where he was the principal project investigator. Actually, he is still very engaged in reseach.Professor Emmanuel Ilesanmi Adeyeye He attended Egbe-Oba High School, Ikole-Ekiti between 1966-1970. He attended College of Education, University of Lagos between 1972-1975 where he studied Chemistry/Biology. He graduated from the University of Ibadan in 1979 with Second Class Honours in Chemistry. He obtained M. Sc. (Analytical Chemistry) from the University of Ibadan in 1983 and Ph. D (Food Chemistry) from The Federal University of Technology, Akure in 1995. ADEYEYE joined the services of the University of Ado-Ekiti as Lecturer I on 30th December, 1998. He rose steadily through the ranks to become a Professor of Food Chemistry on 1st October, 2008. ADEYEYE research interests are in the areas of food analyses for their composition, health implications of food composition, food safety, quality assurance and food functionalities. He has published extensively in these areas and other aspects of Analytical Chemistry. To date, he has over two hundred and forty publications in reputable journals. He has attended various local and international conferences. ADEYEYE has passion for academic excellence, this has manifested in his supervision of postgraduate students. He has successfully supervised two Ph.D and six M.Sc. students. He is currently supervising one Ph.D, two M.Sc. students and one MPhil/Ph.D student. ADEYEYE has held various administrative positions successfully in the University. These include Head of Department so many times, Sub. In terms of community development, Professor ADEYEYE served as the president, all sons and daughters of Odo Ayedun-Ekiti between 2003-2007. He is the Chairman and member of many committees at the Cathedral of Praise, First Baptist Church, Odo-Ayedun Ekiti. Professor ADEYEYE’s kind gesture and humanitarian services to the society cannot be overlooked, he is currently paying school fees of three students at the undergraduate level and one at the postgraduate level. Professor ADEYEYE is married to Mrs. Florence Oluremi Adeyeye and the marriage is blessed with successful children (two males and two females).Mrs. M.A.K.K.P. Perera graduated in 1996 from University of Colombo, Sri Lanka with Second class Upper Division honor degree in Chemistry. She has obtained her M.Sc. degree in Water Management - Specialization in Water Quality Management - 2013 from UNESCO-IHE Institute for Water Education, The Netherlands under Naffic Scholarship programme (18 months) and she has also obtained Master in Science on Analytical Chemistry from University of Colombo, Sri Lanka. She successfully completed Diploma in Public Management in 2006 from Sri Lanka Institute of Development Administration. She successfully completed several local and overseas training on water and food analysis. Perera has worked as Assistant Lecturer in Chemistry at Department of Chemistry, Faculty of Science, University of Colombo, Sri Lanka from 1996 to 1997 and also worked as an Assistant Analyst at Bamber & Bruce Ltd, Sri Lanka from 1997 to 1999. She joined to Government Analyst's Department in 1999 as an Assistant Government Analyst and now working as a Senior Assistant Government Analyst (water and Food Analysis). She is working as deputy technical manager in the water and food division in accreditation programme of the government analyst's department under ISO/IEC 17025:2017.Prof. Dr. Nahla Mansour is currently a Professor of Microbial Molecular Biology and a group leader of Gut Microbiology and Immunology at National Research Centre, Cairo-Egypt.
Prof. Mansour obtained her PhD in 2001 from England in the field of genetic engineering and microbiology from Biological Science Faculty, University of East Anglia (UEA), Norwich – UK.
Her research interests: Human Gut microbiome and its impact role to prevent and cure diseases, phage therapy, Bacterial–mediated cancer gene therapy, and probiotics as oral vaccine.
Prof. Mansour has isolated and characterized numbers of probiotic strains on the molecular basis in addition she constructed a number of genetically modified probiotic strains for oral vaccine delivery and cancer therapy.
Prof. Mansour has been principal investigator for several of international and national projects, and has a recognized publications record in international scientific journals. His overwhelming interest in agriculture started as a teenager at home where it is not unusual to see people dying from malnutrition and ailments that can be prevented if they had access to quality food. Hence, he resolved to pursue a career in animal agriculture and to network with leading scientists all around the globe working tirelessly to ensure food security and food safety. He earned a Bachelor and Master’s degree in Animal Science/ Ruminant Nutrition from University of Maiduguri and Ahmadu Bello University Nigeria, respectively. He is currently a Ph.D. student at the Ahmadu Bello University, Nigeria where he is receiving training in Ruminant Nutrition. He has over 15 years teaching experience and he is conducting animal nutrition researches that can easily be adopted by farmers, analyzing and publishing research results, managing people in the area of animal nutrition, mentoring/ co-mentoring both undergraduate and graduate students engaged in animal nutrition research studies. Teferra is an Assistant Professor of Food Science and Technology at the School of Nutrition, Food Science and Technology under Hawassa University, Ethiopia. Dr. Teferra completed a PhD in Food Science and Technology with his Dissertation research focusing on healthy foods for adult nutrition. Dr. Teferra also had a Masters of Science degree in Food Engineering from Haramaya University of Ethiopia. In 2006 she defended her master thesis, in 2011 her doctoral thesis, since 2015 she become a scientific associate at the School of Medicine in Zagreb, and in 2019 she acquired the title of assistant professor at the Department of Surgery, School of Dental Medicine at the University of Osijek.
