Dr. Kristina Mastanjevic graduated in 2008 in Food toxicology. This determined the future course of her scientific activity as she continued to research mycotoxins in malt and beer. After graduation in 2008, she started to volunteer at Faculty of food technology on a project “Improvement of food safety in production and processing of cereals”. In February 2009, she got a job on the same project and started to work as a teaching assistant for prof. Krstanovic. She got her PhD titled “The impact of molds from genus Fusarium on mycotoxicological quality of wheat, wheat malt and beer” in January 2015. In March 2017, she got a position as an assistant professor at the University of Osijek, Faculty of Food Technology.
Mr. Nigel Atkinson is a Senior Lecture in Food Chemistry, at Teesside University in the UK. He is course leader of BSc Food and Nutrition, and teaches in specialised subject areas including food science, nutrition, food chemistry, biochemistry and metabolism, public health, mapping and data visualisation, learning skills and employability. He is a member of the Scientific Advisory panels for educational conferences including the International Conference of Education, Research and Innovation (ICERI).
His research interests include the enhancement of the nutritional quality of food crops using hydroponics and other soil-less systems, Pedagogies of learning and their relationship to nutrition education, and E-portfolios and competency frameworks to support student employability.
Dr. Abrehet was born in the rural area of Tigray, Ethiopia. Abrehet grow up, attend her primary and secondary school in the place where she was born. Dr. Amita Attlee is currently a Visiting Faculty at Nutrition and Health department, College of Food and Agriculture, United Arab Emirates University, Al Ain. Before that, she worked at University of Sharjah (2008-2017) wherein she served as the first Chairperson of the Clinical Nutrition and Dietetics Department in the College of Health sciences and contributed to its establishment and growth. Dr. Mario CiampoliniI was (born 1933) directed the Gastroenterology Research Unit, a third level referral center in the department of Pediatrics of the University of Florence (Meyer hospital) from 1965 to 2000. In Tuscany I first diagnosed celiac disease by the Watson capsule. I worked at the Cornell University for a joined research with the University of Florence on energy expenditure in children. A long term strategy was designed with Giuliano Parrini, prof. of Physics (Firenze, It), Andrea Giommi, prof. of Statistics (Firenze, It), and Cutberto Garza, Boston College, Rector. Three students came from Amsterdam Medical Center to learn “Initial Hunger (IH)”. The Unit published 150 scientific articles, more than 50 in international Press.
Dr. Spiros Paramithiotis graduated from the Department of Food Science and Human Nutrition of the Agricultural University of Athens, Greece, in 1996. In 1998 he received a scholarship for post-graduate studies from the State Scholarship Foundation of Greece and in 2002 he received the PhD degree in Food Microbiology from the Agricultural University of Athens. In 2003, he joined the Agricultural University of Athens, Department of Food Science and Human Nutrition, Laboratory of Food Quality Control and Hygiene as a member of the scientific personnel where he works until today. He has participated in several research projects funded by the EU, the Greek Secretariat of Research and Technology as well as food industries. Dr. Zahra Saleh Ahmed is full Professor of food sciences at the National Research Center since more than 17 years. She awarded Deutsche Akademishe Austauch Dienst (DAAD) fellowship from 19986 to1989 for completing her PhD. (Hons.) at the Technical University, Munich Germany. She is the technical responsible researcher for an EU-FP7 project entitled “African Food Tradition Revisited by Research” to promote the valorization of endogenous foods and Egyptian dietary patterns and adapting them to the demands of modernity. Research activities undertaken in partnership with 12 research institutions in Africa and Europe include –among other – Benin, Cameroon, England, France, Ghana, Italy, Portugal, and Senegal. She is also PI for several national and international research projects focusing in nutritional, functional and organoleptic properties as well as safety aspects of indigenous foods. She has professional experience in several countries in Africa and Asia during several short- and long-term assignments. Since 2003 till recently served as Food and Agriculture Organization (FAO) consultant in series of projects focusing on assessing and mitigating the impact of Avian Influenza on nutritional status of affected Egyptian communities and biodiversity. Dr. Francisco Torrens is lecturer in physical chemistry at the Universitat de València. After obtaining a PhD in molecular associations in azines and macrocycles from the Universitat de València. Dr. Osama M. Ahmed was granted Ph.D. (in 2000) in Physiology from Faculty of Science, Cairo University, Egypt. Dr. Ahmed is a professor of physiology at Faculty of Science, Beni-Suef University Beni-Suef, Egypt. He has authored/co-authored more than 90 publications, and has also written two book chapters. Dr. Francisco Javier Carballo is Full Professor of Food Technology at the Faculty of Sciences of the University of Vigo, Spain, since 11 july 2000. He received his B.S. (1984) and he obtained his Ph.D. (1989) in Veterinary Medicine from the University of León (Spain), both with Special End of Degree Awards. His doctoral thesis dealt with the purification and characterization of diacetyl reducing enzymes in order to search the way of inhibiting them and preserve the aroma of butter and fermented milks. Later he completed a research stage at the Station de Recherches Laitières, Jouy-en-Josas, France, working in the selection of lactic acid bacteria strains.
In the last 25 years, he has developed his research activity in the study and improvement of traditional foods. In this scientific field, he published more than 170 research articles in the most reputed international journals, and wrote more than 25 book chapters. Former President (from 2008 to 2016) of the Food Microbiology Section at the Spanish Society of Microbiology, he joined the Scientific Committee of many national and international congresses, and he is part of the Editorial Board of several reputed international journals (Food Microbiology, Frontiers in Microbiology, etc.) in the Food Science and Technology field. He has also acted assiduously as a translator to Spanish of scientific books in the field of Food Science and Technology.
He collaborates assiduously as an evaluator for the ANEP (National Agency for Evaluation and Prospective, Spain), for the Agencies of Evaluation of various Spanish Autonomous Communities (Andalusia, Castilla y León, Castilla-La Mancha, and Madrid) and for the National Research and Innovation Agencies of some Latin American countries (Chile, Peru and Uruguay). During the last 5 years he assiduously collaborates as a Technical Expert with the ACIE (Spanish Agency for Certification in Innovation) issuing reports on the certification of projects on development of some of the most important novel food products put on the market by Spanish companies operating in the field of foods. He has collaborated as an expert in the IMAN program (Strategic Intelligence Capturing Unit) of the Xunta de Galicia (The regional government of the NW Spain). He is currently part of the Advisory Committee of the Galician (NW Spain) Health System (SERGAS).
As a University Professor, he has developed his full-time activity successively as Assistant Professor, Associate Professor, and Full Professor, in an uninterrupted manner from November 15, 1989 to the present.

Dr. Ângelo Luís is currently a Post-Doc Researcher in Food Chemistry/Mathematical Modelling at Health Sciences Research Centre, University of Beira Interior (Portugal). He received his PhD in Biochemistry in University of Beira Interior in 2014, as recipient of a research fellow from Portuguese Foundation for Science and Technology. He is author of several international publications and of a national patent.
His main research is focused on the extraction and characterization of bioactive compounds from vegetal matrices; evaluation of the antioxidant and antimicrobial properties of plant extracts and essential oils; and, study of the potential beneficial effects of phenolic compounds on human health.
Professor Tomislav Mašek received doctoral training in animal physiology at University of Zagreb and he is currently associate professor in animal nutrition and dietetics at Faculty of Veterinary Medicine. In addition to research, professor Mašek teaches animal nutrition and comparative nutrition to graduate students and laboratory animal science to postgraduate students. His current research explores lipid metabolism including fatty acid transport through bio membranes in physiological conditions as well as in metabolic disorders such as diabetes and metabolic syndrome. His additional research interest is comparative lipid metabolism in different animal species. He is a recipient of funding from Croatian Science Foundation.
Dr. Marta Garrido Novelle studied Biology at the Universidad Complutense de Madrid (Spain). She obtained her PhD in the laboratory of Professor Carlos Diéguez, world leader in the field of obesity, at Universidade de Santiago de Compostela (Spain), achieving the Extraordinary PhD award. Her thesis dissertation was focused on the role of different obesogenic factors and their interaction with estrogen levels in the development of obesity and metabolic syndrome. During this period, she also did a stay in the Dr María del Mar Malagón laboratory at Universidad de Córdoba (Spain), in order to apply proteomic techniques in the adipose tissue studies.
She worked as a Postdoctoral Research at the National Institute on Aging, NIH, Baltimore (US), under supervision of Dr Rafael de Cabo from 2014 to 2015, where she has the opportunity to widen her knowledge about the interrelationship between aging and metabolic disorders. In 2015, she obtained the Xunta de Galicia postdoctoral fellow and moved to UK. In the University of Manchester, at the Professor Simon Luckman’s lab, she developed a new mouse model to study the brain areas implicated in the regulation of learned food cues and their interaction with homeostatic signals. Then she moved back to Spain, and after a brief stay in the CIMUS (Santiago de Compostela), she has recently joined to Hepatic Regenerative Medicine Group at IMDEA Food Institute at Madrid.

Dr. Prakash Ramalingam, is the research scientist at the Philadelphia College of Pharmacy, University of the Sciences, USA. He earned a B.Pharm from Madurai Medical College (India), MS from the University of Bradford (United Kingdom), and a Ph.D. in Pharmaceutics from the Gachon University (South Korea).

Dr. Francesco Landi is Associate Professor of Internal Medicine at the Catholic University of Rome, School of Medicine. He has the responsibility of the rehabilitation unit and of the two nursing homes affiliated to the Geriatrics Department of the A. Gemelli University Hospital. He has been a visiting Assistant Professor at Brown University School of Medicine, Department of Community Health.
Contributions to advance scientific knowledge and medical practice include active involvement in research and the application to patient care. Main research interests are in geriatric assessment, nutritional problems, sarcopenia, models of health services for elderly care, and geriatric pharmaco-epidemiology. Prof. Landi serves on the Scientific Committee of the Italian Geriatric Society, on the Editorial Board of several international geriatric journals, and as a peer reviewer for numerous international medical journals. He has acted as the Principal Investigator in many multicenter national and international trials. In addition, he is a member of national and international expert groups that work on guidelines in the field of nutrition, sarcopenia and functionality in older adults.

Dr. Francesco Landi is particularly interested in the role of nutrition as part of the integrated care of older adults, and participated in the development of the European consensus on sarcopenia definition and diagnosis.
Dr. Gina Lladó Jordan obtained her PhD in Biomedicine and Health Sciences at Universidad Europea de Madrid, Spain. Her thesis dissertation was focused on the biological biomarkers of Eating Disorders (ED). She has completed 5 masters related to various aspects of health sciences.
During her thesis period, she also did a stay in the Hospital Infantil Universitario Niño Jesús in Madrid, in the unit of Eating Disorders (ED), in order to analyze the relationship between blood alterations, ED and its subtype.
She was an Expert Consultant for the drafting of the new Dietary Guidelines of the Spanish Society of Community Nutrition, guides that were recognized with the Best Ideas Award 2017 in Health Promotion and Solidarity.
In 2013, cooperating in the Food Security Project for the maternal and child population of the Basse Region, Republic of The Gambia, with the NGO Nutrition Without Borders.
Currently she works as an investigator and teacher in Universidad Isabel I, Burgos, Spain, in the University Degree in Human Nutrition and Dietetics. Dr. Semiu Olalekan OGUNWOLU was born on 08 November 1964 at Abeokuta. Dr. Hesam Kamyab received his PhD in Environmental Engineering from Universiti Teknologi Malaysia Faculty of Civil Engineering Department of Environmental Engineering in 2016. He received a Master’s in Biotechnology from Universiti Teknologi Malaysia Department of Bioscience and Bioengineering in 2011. Dr. Hesam Kamyab pursued his research purposes in position of postdoctoral and visiting researcher in University of Illinois at Chicago (UIC) Department of Mechanical Engineering in 2016. However, he completed postdoctoral training at Department of Engineering, UTM Razak School of Engineering and Advanced Technology, Universiti Teknologi Malaysia (UTM) in 2017. He is notably known for his active involvement in the International Water Association (IWA) and International Water Association-Young Water Professional IWA-YWP. He is the member and current chair of IWA Emerging Water Leaders (EWL) Steering committee.
Dr. Hesam’s research area has particularly focused on various techniques related upstream process comprising isolation, identification, and cultivation of microalgae with agro-wastewater under ponding system and characterization of agro-wastewater Palm Oil Mill Effluent (POME) and microalgae. His research is not limited to considered areas. More recently, he has developed his research with integration of indigenous bacteria and concrete as a self-healing concrete. He remain as active researcher and works on organic waste (composting) management to promote the adoption of greener technologies. Dr. Bárbara Silva-Vignato is a post-doctoral researcher at Superior School of Agriculture “Luiz de Queiroz”/University of São Paulo. She received her graduate degree in Animal Science from the College of Veterinary Medicine and Animal Science of the Paulista State University Júlio de Mesquita Filho (2010), and PhD from the College of Animal Science and Food Engineering of the University of São Paulo (2017). Dr. Olfa BEN BRAÏEK received her Engineer degree (speciality of Agro-Food industries) in 2010 from the National Agronomic Institute of Tunisia. She continued then her Master study for 2 years in the same Institute to get her Master degree in Food Science and Technology (Quality and Security) in 2012. After that, she received her PhD (speciality of Biological sciences and Biotechnology) in 2017 from the High Institute of Biotechnology of Monastir, Tunisia. He has (co)supervised 71 post-graduate students at PhD (17) and MSc/DVM (54) levels enrolled in various national and international Universities. Dr. Ahmed graduated Cum De Laude and finished general surgery residency at the same institute then he pursued hepatopancreaticobiliary (HPB) surgery and living donor liver transplant fellowship at Kyoto University hospital for 5 years, Japan during which he concurrently finished his PhD degree from the department of HPB surgery and liver transplant, Graduate School of Medicine, Kyoto University. Dr. Ahmed is expected to pursue another transplant surgery fellowship at the Methodist Hospital, Tennessee, USA next year.
His research focuses on the Nutritional Characteristics of Liver Transplant Candidates, the impact of Sarcopenia and/or Sarcopenic Obesity in such Patients and Peri Operative Nutritional Therapy to Improve Outcomes in Liver Transplant Recipients.

Ms. Ujwani Nukala is a Ph.D. Candidate in her fourth year in the Joint Bioinformatics Program from University of Arkansas at Little Rock (UALR) and University of Arkansas for Medical sciences (UAMS). She received her MS degree in Bioinformatics from UALR/UAMS and M.Sc. in Biochemistry from Osmania University, India. Dr. Pawel Bryla is an associate professor at the Department of International Marketing and Retailing, Faculty of International and Political Studies, University of Lodz, Poland. He graduated from international studies at the University of Lodz and was awarded the title of Master of Arts in European Political and Administrative Studies by the College of Europe in Bruges, Belgium. In 2004, he was a trainee at the Directorate-General for Agriculture of the European Commission in Brussels. For 8 years, he was responsible for managing the Erasmus programme at his faculty. He obtained his Ph.D. in management in 2005 and the degree of habilitation in 2016. He has led several research projects at the national level and coordinated Polish teams in international research projects. Dr. Mohammad Showkat Mahmud is currently working as a Senior Scientific Officer of Research on FMD & PPR in Bangladesh at Bangladesh Livestock Research Institute, Savar, Dhaka-1341. He obtained his PhD in 2015 from the Department of Microbiology, Dhaka University. His research area involved Development of Trivalent FMD vaccine, Establishment of FMD and PPR free zone in Bangladesh and involved as a Co-PI of different research projects of Animal Health Research Division, BLRI. He obtained M. Sc. (Analytical Chemistry) from the University of Ibadan in 1983 and Ph. D (Food Chemistry) from The Federal University of Technology, Akure in 1995. ADEYEYE joined the services of the University of Ado-Ekiti as Lecturer I on 30th December, 1998. He rose steadily through the ranks to become a Professor of Food Chemistry on 1st October, 2008. ADEYEYE research interests are in the areas of food analyses for their composition, health implications of food composition, food safety, quality assurance and food functionalities. He has published extensively in these areas and other aspects of Analytical Chemistry. To date, he has over two hundred and forty publications in reputable journals. He has attended various local and international conferences. ADEYEYE has passion for academic excellence, this has manifested in his supervision of postgraduate students. He has successfully supervised two Ph.D and six M.Sc. students. He is currently supervising one Ph.D, two M.Sc. students and one MPhil/Ph.D student. ADEYEYE has held various administrative positions successfully in the University. These include Head of Department so many times, Sub. Dr. Pieme Constant Anatole, is an associate professor of Biochemistry at the Faculty of Medicine and Biomedical Sciences (FMBS), University of Yaounde I-Cameroon. Dr. Nighat Sultana did her B. Sc and M. Sc. at Karachi University, Pakistan in the years 1990-1992, respectively. Dr. Nighat finished her Ph. D. in 2001 at HEJ Research Institute of Chemistry, International Center for Chemical and biological Sciences, University of Karachi, Pakistan. During her Ph.D she worked on secondary metabolites of higher plants and derivatization of natural products under the supervision of Prof. Dr. Atta-ur-Rahman, (F.R.S., Former Minister of Science and Technology). Afterwords she joined Shaheen Intermediate Colledge as the Principle of Colledge and involved on teaching and administrative work. After that she joined Pakistan Council of Scientific and Industrial Research, Pharmaceutical Research Center PCSIR and worked on applied pharmaceutical commercial aspects of Natural product. She was awarded “Research Productive allowances 2011-2012 (E category), 2012-2013 (F category)” by Pakistan Council for Science and Technology in acknowledgement of research scientific efforts. She was granted a HEC postdoctoral fellowship in 2008 and she worked at Winnipeg University, Canada, where she was involved in drug discovery and its development, she had isolated many bioactive anticancer compounds from plants. In 2009 she returned back to Pakistan and joined PCSIR as a Principal Scientific Officer.

He then went on to obtain his BSc in Urban and Regional Planning with minor in Estate Management from the University of Wisconsin-Madison, Wisconsin. He an obtained Master’s degree in City Planning from Howard University, Washington D.C., and Ph.D.in Traffic and Transportation Planning from the University of New South Wales, Australia. Dr. Oluwoye currently is a Tenured Professor of Transportation and Environmental Health and the Director of the Center for Urban and Rural Research (CURR) at Alabama A&M University. He has obtained experience ranging over three countries (America, Australia, and Nigeria) as a lecturer and practiced as a Land Economist (Land-use and Development) and Town, Environmental, Traffic, and Transportation Planner. Dr. Oluwoye currently serves in several journal editorial boards. Dr. Oluwoye has accumulated over 60 peer-reviewed publications in reputable journals in various areas including his current research focus on transportation and environmental health. Dr. Pham grew up in Southern California. He attended California State University, Long Beach (CSULB) and received a Bachelor of Science in Biological Chemistry and a Bachelor of Arts in Chemistry. He further completed a Master of Science in Health Science at CSULB with an emphasis in public health and fundamental research in biological chemistry. Subsequently, he received a Master of Arts in Biomedical Sciences from Midwestern University, Arizona prior to receiving a medical degree at the Arizona College of Osteopathic Medicine. He completed his internship and residency at Garden City Hospital, a teaching hospital affiliated with the Michigan State University, for its Internal Medicine program, while serving as a clinical instructor to the Michigan State University's College of Osteopathic Medicine, Pacific Northwest University of Health Sciences, and University of Pikeville. He is completing medical subspecialty training at the University California of Los Angeles Medical Center (Olive View-UCLA Medical Center) in Nephrology. Dr. Pham has been extensively involved with scientific and clinical research. He conducted research in inorganic chemistry, biological chemistry research while he was at CSULB. Jimmy co-authored several papers in multiple high-impact publications and a book chapter while he was at this institution. Dr. Pham continues his passion for learning and exchanging scientific knowledge while at Arizona College of Osteopathic Medicine. He recommences further with translational research in development of nano-pharmaceutical formulations for investigational cardiovascular therapy, cancer chemotherapy, diagnostic imaging and nano-medicine. He authored several important papers in the dvancement of drug delivery and methods and numerous articles in high-impact journals and a book chapter with Mitochondrial Medicine, a leading publisher in cutting-edge research.

Dr. Khalef LEFSIH, Ph.D. I’m a Lecturer-Researcher in the Department of Biochemistry & Microbiology at UMMTO University. My work is centered on developing and integrating innovative preparation and fictionalization of new polysaccharide molecules with potential bioactivity. Broadly, I’m member of Algerian leading research laboratory BBBS (Biomaths, Biochemistry, Biophysics and Scientometry). I coauthored many research articles. I’m currently full-time lecturer of Biochemistry and Enzymology in Faculty of Biological and Agronomical Sciences at UMMTO University. Dr. Emad Sabry Shaker Further research interests include extracting some valuable natural colorants and antioxidants from waste plant materials. That will be in benefit in environment, economy and health aspects. My goal also includes the use of antioxidants in food science as well as pharmacology fields. The relationship between the chemistry study such as; identification of potent structure using (GC, GCO, SHGC, GC-MS, PTR-MS, HPLC, PCR) instruments, and the biological effect of these useful compounds as protective from DNA breaking will be among my aims. Some of the diseases are being related to destruction free radicals such as diabetes, atherosclerosis and Alzheimer have begun to enroll in my research. Enhancing the biological potential effect by nanotechnology has already begun in my research works.
Exploring the stability of food products by using natural antioxidants and studying the effects of antioxidants as functional food and food additives to protect from lipid oxidation are examples of my interests.
Dr. Mahmoud Alkhateib is a Sports Dietitian who is working with young athletes in different sports at Aspire Academy. He has worked closely with athletes from a wide variety of sports including Squash, Table tennis, football, Gymnastics and Fencing. Dr. Raffaele Pilla, Pharm.D., Ph.D., Doctor Europaeus, received his Master’s degree in Pharmacy at G. d’Annunzio University in Chieti-Pescara, Italy in 2005, where he also served internships at the Cell Physiology Laboratory and Molecular Biology Laboratory. Prior to his degree, he was an Erasmus Student at Faculté de Pharmacie de Reims in Reims, France. He received his Doctor Europaeus in 2010 from Pitié-Salpétrière Institute in Paris, France. Also in 2010, he received his Ph.D. in Biochemistry, Physiology, and Pathology of Muscle at G. d’Annunzio University in Chieti-Pescara, Italy. He was hired as a Postdoctoral Scholar in the Department of Pharmacology and Physiology at the University of South Florida in Tampa, on two research grants respectively funded by the Office of Naval Research (US Navy) and Divers’ Alert Network. He has written and lectured widely on his experiences. He has been involved in ongoing research at the University of South Florida with the use of ketone esters. The initial work, funded by the Office of Naval Research, focused on using ketone esters to prevent CNS oxygen toxicity. He is working to coordinate efforts in the United States and Italy to expand the ketone ester research to other conditions such as Epilepsy and Cancer and its use as an alternative metabolic fuel. He has also served extensively in various international medical missions, orphan and homeless programs, emergency medicine rescue and training, and animal rescue and fostering. He is fluent in Italian, English, French, and Spanish. He has a special interest in journalism and photography, and he enjoys sailing, SCUBA diving, ultralight airplane piloting, soccer, volleyball, jogging, and motorcycles.

Dr. TAMBA STEVEN SONDA is a senior lecturer handling food and nutritional sciences for both undergraduate and post graduate students at the above Institute where he is also serving as Director. Tamba received his PhD (Food Science) and MSc (Food Science & Technology) from Jiang Nan University in Wuxi, PR China. Tamba has had a wealth of experience while he climbing the academic ladder. This is because after high school he entered the Milton Margai Teachers College where he obtained the Higher Teachers Certificate and after five years of working experience as a teacher he enrolled at the Njala University where he obtained his BSc degree in Agricultural Education. Dr. Magellan Guewo-Fokeng completed a Bachelor of Science (option Microbiology and Molecular genetic). He then obtained a Master of Science Degree (option Biotechnology and Development, Molecular Biology) with Distinction, under the supervision of Professor Mbanya Jean Claude and completed his PhD (option Biotechnology and Development, Genetic and Molecular Biology) with Distinction in 2018 under the supervision of Professor Mbacham Fon Wilfred, all in Biochemistry from the University of Yaounde I in Cameroon.
After studying some human genes like Transcription Factor 7 Like 2 (TCF7L2), Peroxisome proliferator-activated receptor gamma 2 (PPAR-?2), Krüppel Like Factor 14 (KLF14), that predispose for type 2 Diabetes, Obesity and Ketosis prone diabetes, which are growing concern in Africa and also in Cameroon, he propose the coordinate role of KLF14, a master gene which regulates both diabetes and obesity, and provides a variety drug development targets in the form of signal pathways that can reduce the progression of multiple metabolic phenotypes or the risk of their complications. He is presently working on how to use these genetic markers and others in the personalization of medicine. Magellan assists Professor Sobngwi Eugene as research associate in the Laboratory of Molecular Medicine and Metabolism (M3Lab) at the Biotechnology Centre (BTC) of this University mentioned above. He is active in other research programs includes the effect of Weight lost and Nutrition on Insulin Sensitivity, Cardiovascular diseases and Insulin sensitivity in patients with HIV/AIDS; with 16 peer-reviewed publications, including the first Systematic Review and Meta-Analysis on the genetic risk of type 2 diabetes in the populations of the African continent, and over twenty (20) communications at the National and International conferences. Mosele is a Principal Research Scientist and Head of Food Technology Department at the National Food Technology Research Centre (NFTRC), with a PhD in Food Science from the University of Copenhagen. Her research focus is on product development in cereals and legumes covering a wide range of processing technologies including malting, fermentation and heat treatments, as well as sensory evaluation. She has done her Post-Doctoral Fellowship at the Institute of Chemical Technology, Mumbai, through the prestigious CV Raman Fellowship. Professor Dr. Mohamed Azmi Ahmad Hassali graduated with a Bachelor Degree in Pharmacy from Universiti Sains Malaysia (USM) and a Master’s Degree in the field Clinical Pharmacy from the same university. In the year 2002, he was selected to receive the ‘Universiti Sains Malaysia Academic Staff Training Fellowship (ASTS)’ to pursue his PhD studies in the field of social and administrative pharmacy at the Australian Victoria College of Pharmacy, Monash University, Melbourne. Following his return from his PhD studies to his alma mater, he had been recognized as the only expert in the country with specialization in social and administrative pharmacy teaching and research. Professor Azmi is also one of the key academicians in the setting up the Discipline of Social and Administrative Pharmacy at the School of Pharmaceutical Sciences, Universiti Sains Malaysia which caters for graduate research training in social pharmacy field for students of more than 14 countries. He holds membership and council post in many international health based organization namely Health Action International-Asia Pacific (HAI-AP), Action on Antibiotic Resistant (ReAct) and International Network For Rational Use of Drugs (INRUD). At current, he also serves as the international advisory board member for many reputable international pharmacy journals. Dr. Farid Menaa is an inter- and multi-disciplinary professional with worldwide reputation. He has three international post-doctoral terms in Oncology, Dermatology, and Hematology; MBA Entrepreneurship and MD candidate. During his ongoing career, he has mainly contributed to the identification and functions of new human disease-causing genes and variants, formulated natural products for anti-aging and developed innovative theranostic strategies against cancers, cardiovascular diseases, diabetes, obesity and infectious diseases. He has more than 10 years’ experiences either in the academic, hospitals or industrial sectors. Dr Sara has worked as Research Fellow for several EU-funded research projects and was awarded research grants from CONACYT (Mexico) and the BBSRC (UK). She is co-founder of Your Choice Nutrition in Kuwait, where she has been working on functional nutrition and wellness since 2014. Currently she is head of research and development at ONO Labs in Germany. Dr Sara sits on the editorial board of various international journals. She is the author of several peer-reviewed publications and is currently working on her fifth book. Dr. Garduño-Diaz is a member of the Academy of Nutrition and Dietetics, the American Overseas Dietetics Association, Professionals in Nutrition for Exercise & Sport, and the World Public Health Nutrition Association, for whom she is a member of the executive committee. Dr. Mohamed Eddouks is Professor at Moulay Ismail University, Faculty of Sciences and Techniques Errachidia, Morocco. He is a researcher in Physiology and Pharmacology with a Master Degree in Metabolic and Molecular Endocrinology from University of Paris vi, a specialized certificate in Endocrine Pharmacology from University of Paris vii and PhD degrees in Physiology and Pharmacology from University of Liege, Belgium and Sidi Mohammed Ben Abdellah University, Fez, Morocco. After his post-doctoral fellowship at Department of Physiology, Faculty of Medicine of Montreal, Canada, he is working for the last 16 years on medicinal plants. His work on antidiabetic and antihypertensive plants is well recognized globally. His research focuses on ethnobiological as well as pharmacological issues in the use of Moroccan medicinal plants for the treatment of diabetes mellitus, obesity and hypertension. His contribution to this field includes four international books and more than 80 peer-reviewed articles and book chapters of international repute. He served as Guest Editor and Member of Editorial Board of several international journals. He has been honored with the first Prize of Scientific Research in 2008 by the Moroccan Association of Research and Development and the first Prize of the Federation of Arab Scientific Councils in 2016. He has been the founding Dean of Polydisciplinary Faculty of Errachidia from 2008 to 2012.
Dr. Blanca Aguilar Uscanga is Biochemical Engineer in Food and has a Masters in Food Science graduated from the Institute Technologic of Veracruz (ITV) México (1985-1994). She completed her doctoral studies in the specialty of Biotechnology in the National Institute of the Sciences Appliqués of Toulouse in France (1999-2003). Actually is currently research professor and full time (permanent post since 2006) in the University of Guadalajara in the University Center for Science exact and Engineering (CUCEI). She belongs to the National System of Researchers in Mexico recognized by CONACYT, level 1. The research areas in which it working is: Food Biotechnology and Industrial Microbiology, which cover different lines of research such as: Obtaining bioactive compounds and metabolites of industrial importance through of microorganisms, production and development of functional foods, fermented beverages, probiotics, prebiotics and food safety. She features international collaborations with the Institute Armand Frappier in Laval, Canada and the Institut sur la nutrition et les aliments fonctionnels (INAF) in Québec. Dr. Tarek Madkour is an award-winning chemistry professor, a Fulbright scholar and a pioneer in the research area of computational modeling of polymers. He obtained his PhD from University of Cincinnati, OHIO, USA under the supervision of Professor James E. Mark, a distinguished research professor and a member of Nobel Laureate P. J. Flory’s research group. Madkour was awarded the Fulbright research scholar award in 1996 supported by both the Fulbright organization and the United States Air Force. He has been awarded the Harry M. Showman Award in chemistry from Jordan in recognition for his pioneering research regarding computational modeling and simulation in the area of polymer chemistry in the Middle East. He has been also awarded the Polymer Society of Japan Award and the State of Egypt Award in chemistry. Madkour has successfully secured research fellowships including the U.S. peace fellowship and a supreme council research fellowship from the Catholic University of Leuven (also currently known as the University of Leuven) in Belgium. He has over 55 international peer-reviewed publications and has delivered presentations in more than 14 international conferences worldwide. He has supervised eight graduate-level theses and secured funding for over nine major research grants as the primary research investigator. After completing his PhD, Madkour finished his postdoctoral research on the modeling and simulation of gas diffusion through polymers supported by the U.S. Environmental Protection Agency. In 1993, Madkour returned to Helwan University in Egypt as a lecturer of physical chemistry and spent three years there establishing the polymer modeling and simulation research lab at the Faculty of Science. In 1996, Madkour traveled once again to the United States on the Fulbright research scholar award where he spent over six months researching and delivering a graduate-level course on polymer simulation. In 1997, Madkour joined the ICI-Europe, a leading British chemical industry, as a senior research scientist, where he helped to establish the molecular modeling and simulation research facility in the organization's research and development center in Belgium. In 2001, Madkour returned to academia as a visiting professor of physical chemistry of polymers at the Catholic University of Leuven, and in 2002, joined the United Arab Emirates University as an associate professor of physical chemistry of polymers and as the chair of the Department of Chemistry. In 2005, Madkour was recruited by the American University (AUC) in Washington, D.C. as a member of the founding team of AU's new campus in West Africa. Following his work with AU, Madkour began working as the director of academic planning on a collaborative EU-Turkish project in 2009, which sought to establish a new Turkish University. In 2010, Madkour accepted a position at Taibah University in Saudi Arabia prior to joining AUC as a professor of physical chemistry of polymers in 2011. Madkour is a member of several societies and groups, including: the American Chemical Society,;Rubber Division, American Chemical Society;the American Physical Society; and the Belgian Polymer Group. Her dissertation deals on food security and the use of Ordinary Least Square Estimation (OLS) to which she was able to present the results to panel of evaluators in international conferences in Taiwan, Yokohama National University in Japan and University of Economics in Vietnam. Her latest publication is entitled Sustaining Food Security in the Philippines: A Time Series Analysis in the International Journal of Agriculture and Food Sciences Volume 5 Issue 6 of December 2017. Dr. Ishaya Usman Gadzama is a Livestock Nutritionist/ Researcher working at the Dairy Research Programme of NAPRI, Ahmadu Bello University, Nigeria. Dr. Hao-Yu Yang is an algorithm engineer at Cura Cloud Corp. Seattle, WA. He received Masters’ of Science degree in Biomedical Engineering from Yale University with an emphasis on medical imaging and machine learning. Before starting his graduate work, he worked with Dr. Suewei Lin at the Institute of Molecular Biology, Academia Sinica, Taiwan. He developed an automated tracking system to quantitatively assess the food-seeking behaviors of Drosophilas during his time in Academia Sinica. The work was later published in a high-impact journal. He co-authored multiple publications in international conferences and high-impact journals while working towards his masters' degree at Yale. His masters' thesis was on the topic of medical image generative modeling adopting adversarial autoencoders and his adviser was Professor Lawrence Staib. After receiving his masters’ degree, he moved to Seattle where he worked as a research and development algorithm engineer at Cura Cloud Cooperation. Dr. Eva Dorta is a Researcher in Food Science and Technology at the Faculty of Pharmacy of the University Complutense of Madrid (UCM), Spain, since November 2018, in the group of ALIMNOVA (Nuevos alimentos. In this project, investigated about meat proteins oxidation processes and protective effect of extracts obtained from residues of the mango industry. In May 2016, she finished their postdoctoral studies and at the same year, she was awarded a Fondecyt Initiation Project (Fondecyt 1160749): "Influence of Tryptophan and Tyrosine residues in the Activity of Meat-Derived Peptides as free radical scavengers and inhibitors of the NF?B activation", in which she is currently working.

Dr. Pasquale Avino received his Master in Chemistry in 1992 at the University of Rome “La Sapienza” and in 1997 the Ph.D. in Chemical Sciences at the University of Rome “La Sapienza”. He spent one year as Post-Graduate Researcher at the Universty of California, Irvine (USA) studying the Separation of Non-Methane Compounds and the Halocarbons and their behavior in atmosphere. The year was spent at the Rowland’s Laboratory. Prof. Rowland was awarded with the Nobel Prize in Chemistry in 1995 for his study on the Ozone Depletion (the Rowland and Molina theory). In September 1997 he participated in the SONEX project funded by NASA for determining hydrocarbons in troposphere. In 198 he received the “Group Achievement NASA Award” for his important support in the SONEX Program.
From 1999 to 2018 he was appointed as Researcher at the ISPESL/INAIL Research Center. He was involved in the Air Chemical Laboratory: his studies were devoted to different aspects of the atmospheric pollution with main regards to the characterization of both residential (urban and suburban) and industrial sites at high risk.
In 2003 he was the receipent of the International “Environmental Sapio Award” for his research in the environmental field and in particular in the atmospheric particulate matter problems (characterization, physical and chemical composition, health effects, etc.).
From 2018 he moved to the University of Molise, Campobasso (Italy) where he has appointed as Assistant Professor of Analytical Chemistry and Environmental Chemistry at the Department of Agricultural, Environmental and Food Sciences. His group develops novel analytical methodologies for studying chemicals (e.g., POPs) in Food, Beverage and Environmental Matrices.
From 2002 to 2005 he was Unit Responsible for ISPESL in the European Project (FP VI) “Methodology to Develop Acute Exposure Threshold Levels (ACUTEX) in case of Chemical Release” (P.I. dr. Annick Pichard, INERIS, France): in the implemetnation of the “Seveso II” Directive, the project would be increase the methodologies, softwares and guidelines to establish acute exposure levels in case of accidental release of Toxic Chemical Substances.
He attends to many National and International Committee Panels for problems connected with Environmental Efforts.
Since 1992 he is a Member of the Italian Chemical Society (SCI) (Analytical Chemistry Division and Environmental Chemistry and Cultural Heritage Division).

Dr. Pin-Der Duh received his Ph.D. from National Chung-Hsing University, Taiwan, ROC in 1994. He became a Professor at Department of Food Science and Technology, Chia Nan University of Pharmacy and Science in 1998. Lavinia Florina Calinoiu, 28 years old, is a food engineer by profession and young researcher at Faculty of Food Science and Technology, University of Agricultural Sciences and Veterinary Medicine of Cluj-Napoca. She holds a BSc in Food Science and Technology, and MSc in Food Quality Management, and currently pursuing a PhD. (3rd year) of Food Biotechnology at the same university. Lavinia has a total of 7 ISI publications (WoS), 3 BDI (e.g EurSafe Conference 2018), h-index 2 and is a reviewer for Global Nutrition and Dietetics journal and Bulletin of University of Agricultural Sciences and Veterinary Medicine Cluj-Napoca-Food Science and Technology.
Dr. Muhammed Yuceer is an academician (Assistant Professor in the Department of Food Processing, Canakkale Onsekiz Mart University, Canakkale, Turkey). Yuceer received his bachelor's degree from Yuzuncu Yil University (2002), and his master's degree from Istanbul Technical University's department of food engineering (2007) in Istanbul. Yuceer obtained his PhD in Food Engineering Department of Canakkale Onsekiz Mart University (2013) under the guidance of Professor Cengiz Caner. His career began in the R&D department of A.B Foods Company, which manufacturers' egg products (liquid, frozen, powder), cakes, pastry products and processing aids for the food industry. Before joining the University of Canakkale Onsekiz Mart, he was a Deputy Director of Factory Manager (Prod. -Quality-R&D Manager) for A.B Foods Company, as an egg-processing expert for 10 years. Dr. Yuceer is on the Editorial Board in Journal of Food Research. He has authored numerous articles and his current research interests include novel processing methods, egg science and shelf life extension of foods as well as functional foods. Yuceer’s research focused on the application of novel techniques (antimicrobial packaging, edible coating, ozone, ultrasound, etc.) in eggs. He has deep knowledge on egg processing with over ten years of experience in egg research.Yuceer is married, and is a father of two children.

Dr. Ana María studied Biology-Biochemistry at Valencia University. She completed her PhD with a scholarship from the University of Bristol (1993-97). She switched to the neuroscience field and spent 3 years at the University of California San Francisco (California, USA). In 2000, she moved to the University of Padova (Italy). From 2002 to 2011, she worked as a researcher at the CIPF research institute (Valencia, Spain). She joined the University of Jaume I (Castellon, Spain) in September 2012. She coordinates the Neurobiotechnology research group since 2013. Ana has published over 45 papers and maintain international collaborations. She is a review editor of Nutritional Immunology (a subdivision of Frontiers in Immunology and Frontiers in Nutrition). Dr. Gulcan Arusoglu is an Asst. Prof. Dr. working at Kirklareli University, Turkey. She graduated from Hacettepe University, Faculty of Health Sciences, Department of Nutrition and Dietetics, Ankara which is the top University in Medical Sciences and Depart. of Nutrition and Dietetics in Turkey. She completed also her masters and PhD degree at the same University.
She has finished her fulltime PhD thesis in 2012 September at Hacettepe University when she was a research assistant there for totally 8 years. She completed the dissertation with the department of Endocrinology of Hacettepe University Hospital on “The Investigation of Hormon Dynamics by Meal Tolerance Test (MTT) and Satiety Index in Patients with Polycystic Ovary Syndrome" which is also the first study of its kind in Turkey and one of the preliminary research in its kind in the literature. She has completed three national and two international projects so far. She has TOEFL degrees in English and can speek very good German. She has oral presentations in the US, UK, Italy and Austria. She has 5 international (SCI) articles. One of them has published on American Clinical and Endocrinological Metabolism (JCEM) heading of “Basal and Meal-Stimulated Ghrelin, PYY, CCK Levels and Satiety in Lean Women with Polycystic Ovary Syndrome: Effect of Low-Dose Oral Contraceptive”.
She has as an academic portfolio: 2 invited speaker presentations, 2 oral presentations, 10 proceedings, 4 review articles, 6 research articles, 3 book chapter, 5 completed projects so far. She has participated in total 151 certificated courses and congresses. Her administrative duties in universities by now were head of department, erasmus coordinator, member of the board of faculty of health, and project unit membership. She was even responsible for accreditation of the N&D department also at Hacettepe University.
She awarded prizes from The Scientific and Technological Research Council of Turkey in 2011, from Hacettepe University Research Department 2012, and from Prof. Ayse Baysal Nutrition Foundation in 2012 for her PhD project. Ass. Prof. Maša Hrelec Patrlj, MD, PhD- graduated at the University of Zagreb School of Medicine in 1996. She started her professional career working as a physician at the Emergency Medical Center in Zagreb for two years, and after completing a 5-year residency gained her degree in pediatric surgery in 2004. In 2006 she defended her master thesis, in 2011 her doctoral thesis, since 2015 she become a scientific associate at the School of Medicine in Zagreb, and in 2019 she acquired the title of assistant professor at the Department of Surgery, School of Dental Medicine at the University of Osijek. She acquired her professional education in many hospitals in Croatia and worldwide, gaining valuable experiences at the University Clinic of Hamburg (Germany), Cincinnati Children’s Medical Center (USA), Johns Hopkins University (USA), Norwich University Hospital and Great Ormond street Hospital (United Kingdom). She published a large number of expert and scientific works, of which 10 were indexed in the Current Content. Rich experience in surgery, particularly in infant surgery and many years of work with children have enriched her professional capability as to enable her to counsel and educate parents in the fields of children’s medicine, working with babies and overcoming the everyday difficulties.
